Traeger century 885
This is solved by having the Super Smoke setting, which the 885 doesn't have. Looking at more expensive Traegers, I saw that I'd be spending about $1300 to get that feature. It honestly just turned me off to the brand in a way. At least for the newer grills. In the end, I decided to clean the 885 up really good.
